Founded by Marcello Segalina, a chef with over 20 years of experience in professional kitchens, Studio Cibo brings a considered and modern approach to food — shaped by years of working across Italy, England, and Australia.
Having completed his apprenticeship within Michelin-starred kitchens and refined his craft in renowned restaurants in London as well as award-winning venues across Australia, his experience spans fine dining, wine bars, and high-quality casual settings. This diverse background informs a style of cooking that is both technically precise and naturally adaptable.
At its core, Studio Cibo is about creating space — removing the time, pressure, and organisation required to produce exceptional food, while maintaining a consistently high standard.
